Making Relishes At Home
Relishes usually are midway between a chutney, as well as a pickle because, though they'll use the same kinds of fruits and vegetables, the finished texture differs. A stainless steel or enamel-lined pan that is adequate to contain all of the ingredients. Brass, copper, or iron pans really should not used as they can react with the vinegar and cause a metallic flavor to the relish.
Long-handled wooden spoon.
Sieves - stainless or nylon
Wide necked funnel - a heatproof glass, stainless-steel or enamel cup is effective for pouring the chutney in to the jars. Alternatively a large necked funnel, or a large ladle can be utilized as well.
Muslin or cotton squares - to tie up whole spices used for flavorings.
Food scale
Chopping boards and s / s knife.
Jars - use small jars which might be clean, dry and sterilized. Sterilize the jars right before filling, place into a cool oven.
Lids - these are most vital. Vinegar corrodes metal, so use plastic screw or snap-on type.
Special preserving or bottling jars are suitable as well, and are available either with screw-on or clip-on lids. Check with various manufacturers to find the type you desire.
Labels - For the front of the jars to name the relish and also the date it was made. You can also print on your computer, cute custom graphic labels designed by you for an added flair to your final product.
Be sure to gather the ingredients your relish recipe calls for. Get the freshest possible, and wash thoroughly all fruits and vegetables before starting.
Not all relishes require sugar to be added. The vinegar must be of fine quality and also have an acidic content of a minimum of 5%. Malt, white or wine vinegar can be used.
Spices - follow your recipe, some necessitate tying whole spices in muslin material, whilst others are added directly to the relish.
The various uses of relish are certainly versatile. Some are great with cold meats, salads and cheeses. They are often put into casseroles, sauces, and marinades, or used being an accompaniment to curry. Some are great served on a platter with various gourmet crackers. can anyone give me a recipe for tomato relish and/or tomato chutney?
please give quantities in mls, spoons, cups (not ounces etc- thanks!)
Ripe Tomato Relish
Wash, peel and chop 3 quarts tomatoes.
3 cups celery, chopped
3 cups onions, chopped
1 cup green pepper, chopped
1/4 cup salt
Let stand overnight. Drain. Mix into large pan and bring to a boil the following ingredients:
2 cups sugar
1/4 cup brown sugar
1 cup vinegar
1 1/4 tsp. black pepper
1 1/2 tsp. pickling spice
Add vegetables and simmer 15 minutes. Very good served on hot dogs or fried potatoes. The tomato relish can also be canned.
AND
Easy Tomato Chutney
10 big fully ripe red juicy tomatoes
2 big onions, chopped
5 dried garlic, peeled
2 teaspoons sugar
Salt
1 teaspoon black pepper
2 bay leaves
4 cloves
1 inch cinnamon
1 pinch nutmeg
1 tablespoon oil
Take a non stick heavy bottom pan and heat the oil.
Put bay leaves, cloves, cinnamon first and then add onion, garlic, salt and black pepper powder.
Sauté for 2 minutes and add chopped tomatoes, salt and sugar.
Keep covered and stirring for 10 minutes or until tomatoes are soft.
Allow to cool to the room temperature.
Add nutmeg now. Remove the bay leaf before blending; stray bay leaves can really mess up a recipe!
Put the mixture in the blender and blend till smooth (Remove bay leaves before blending).
Fill in a sterilized jar and keep refrigerated.
